Milwaukee’s food scene is filled with iconic restaurants.

One only needs to venture as far as the Wisconsin State Fair Grounds to grab a sampler platter or State Street to enjoy delicious barbecue ribs to tell you that Saz’s Hospitality Group is one of them and continues to leave its mark on our community.

Launched in 1976 by Steve Sazama, widely known as “Saz,” the business began as Saz’s State House, a small tavern on Milwaukee’s west side. Over the last five decades, Saz’s has expanded its offerings to include catering, event venues, festival operations and signature products. The business is commemorating its 50th anniversary this month with Festa Sazama, a four-day community celebration.

“When I think of how our company and brand have stood the test of time, it has to do with staying true to our roots but absolutely being willing to step outside the box to take chances, all in the name of hospitality; in the name of serving the community, our teams and our guests,” said Saz’s Chief Operating Officer and Partner Joe Brueggemann.

Brueggemann got his start in the hospitality industry at just 14. He attended culinary school and worked at a hotel circuit before taking a kitchen manager role at Saz’s State House in 1987. Brueggemann has been with the company ever since, crediting the fantastic leadership of Saz for his long tenure.

“What a fantastic employer. I think you could interview 1,000 Milwaukeeans and get the same answer. He’s just a genuine man,” said Brueggemann. “He has always been clear in defining the expectations and has given us a lot of leeway for growth…”

Operating and expanding a business over the span of 50 years is no easy feat. Saz’s successfully navigated the economic downturns of the late ‘70s and early ‘80s, the Great Recession of 2008 and the uncertainty brought on by COVID-19.

“Those are big things for us to still be here after 50 years. We’re super proud of that,” said Brueggemann. “I think adaptability is something that really helps us to stay successful.

Brueggemann pointed to other key areas of company pride.

Saz’s catering division started out in 1990, working 30 events a year. This division has since grown to accommodate over 2,000 events annually. The company has taken its festival division from a small stand in 1982 to a family-favorite at popular festivals, including the Wisconsin State Fair and Summerfest. The barbecue sauce and baby back ribs that helped put Saz’s on the map are now available for purchase at over 250 retail locations.

“Steve has always emphasized building relationships. Relationships with our guests and clients, our community and our employees are a big indicator of our success. Milwaukee and southeast Wisconsin are certainly changing and evolving, and it’s been fantastic to change and evolve along the way as well,” he said.

Saz’s is inviting the community to celebrate the company’s 50-year legacy and toast to another five decades of growth and success. Festa Sazama, a four-day free festival, is happening March 26-29, featuring a Brewers opening day tailgate, Milwaukee’s largest fish fry, live bands and more.

“You know this little thing that [Saz] started when he was 30 years old back in 1976, has just taken on a whole shape that he could never have imagined. I’m excited for him. I’m excited for our staff. I’m excited to see what the future has in store,” said Brueggemann.
